Quinoa in three colors. Quinoa, like other ancient grains, has begun to become very popular and appears in several diet programs due to its various health benefits. The reason quinoa is considered an ancient fruit is because it has not undergone any mutation for hundreds, maybe even thousands of years. The Incas called quinoa the “mother of all grains” and cultivated it five thousand years ago. Today, the most common types of quinoa we will find are red, white and black. Nutritionally, quinoa is a whole grain food, ie we consume the whole seed, without removing pieces to make it tastier. This way, we do not lose much of the fiber and other nutrients found in its bark. Whole grain foods, such as quinoa, contain important vitamins, minerals and fiber, which regulate the function of our digestive system and help us feel full for longer. Specifically, quinoa contains iron, B vitamins, magnesium, phosphorus, potassium, calcium, vitamin E and fiber. It is one of the few plant foods with a high protein content, and contains all the important amino acids. It is also full of healthy fats, in the form of oleic acid, a “good” monounsaturated fat, and alpha-linolenic acid, the Omega-3 found in most plants. To cook quinoa, add one part of it to two parts of liquid (water or milk) in a saucepan. Once the mixture starts to boil, lower the temperature and let it simmer for about 15 minutes, covering the pot.
