Cumin seed. Cumin seeds are used as a spice for their characteristic taste and aroma. It is globally popular and is a staple in many cuisines, especially in South Asian, North African and Latin American cuisines. Cumin can be found in some cheeses, such as Leyden cheese and in some traditional breads from France. Usually used in traditional Brazilian cuisine. Cumin can be an ingredient in chili powder and is found in mixtures of atsioto, adobo sofrito, garam masala, curry powder and ras el hanout.
Cumin can be used either grated or whole seeds. It helps to add an earthy and warm feeling to the food, making it a staple in some stews and soups as well as in seasoned sauces such as chili. It is also used as an ingredient in some pickles and sweets.
In Cyprus it is widely used as a pepper.
